Bruthen is correct! brut means very dry, especially in relation to that fine drink from the champagne district of France (or the Australian imitators), and of course a chicken is a hen.

Before the prices went silly I used to enjoy both Verve Cliquot and Moet - these days for something special it tends to be Domaine Chandon.
What about Hawkesdale?
